Foote Street Farmstand Menu week of March 15th:


I’m feeling Greek this week!


Tzadziki ~ Gourmet cucumbers, local yogurt & sour cream, local organic shallots, organic lemon juice, organic brown rice vinegar, olive oil, organic peppermint, local honey, salt & pepper. Traditionally served over lamb pitas but also great for dipping.


Hummus ~ Organic chick peas, our roasted garlic, organic tahini, organic lemon juice, salt, cumin & pepper.


Lentil soup ~ Organic indigo lentils, local organic red potatoes, organic red onions, local organic carrots, local organic shallots, organic celery, our garlic, local organic cider vinegar, organic balsamic vinegar, olive oil, cumin, salt, pepper & bay leaves. We like to serve this over a handful of shredded fresh spinach (coming in tomorrow from Mtn. Yard Farm!).

Three-bean Chili with corn ~ Organic kidney, garbanzo & black beans, local organic corn, organic onions, local organic carrots, organic celery, organic crushed tomato, our garlic, green mtn. salsa (ingredients available in the shop), olive oil, chili powder, cumin, salt & pepper.


With our surplus of great local eggs, tonight I made vanilla pudding and tomorrow i’ll make some kind of fritatta with chevre, mushrooms...


Baked goods this week: Pitas every day! Tues. multigrain bread, currant scones, honey-ginger cookies. Weds. currant scones & cookies, Thurs. ginger scones & cookies, Fri. potato bread, apple pies, ginger scones, cheese scones & macaroons. Sat. Pies & cheese scones.

Yesterday we started our greenhouse in Ripton (it's smaller & thus more efficient in the beginning). The onions that i started inside last week sprouted today! The photo to the left shows the auto vents just opening, while the wood stove heats the greenhouse. Yes, those are our skis drying after a "spring" ski this morning.





Below the greenhouse is a photo of two satisfied cookie customers (in our recycled plastic lawn furniture - - made in the usa)!
